Bologna is the birthplace of the first European university, a city of almost 40 kilometers of covered galleries and one of the largest Catholic churches in the world, the gastronomic capital of Italy, the main city of the province that gave the world mortadella, parmesan and Parma ham, Bologna embodies everything that is commonly called the spirit of Italy. Until the mid-seventies, the production of meat delicacies was located right here, in the city center: the equipment, which has become a museum exhibit, is still on display. Tamburini, by the way, is not only a shop, but also a wine bar with a restaurant, the right place to get acquainted with Bolognese cuisine and wines. Take an assortment of cheeses and sausages and tortelloni with ricotta, butter and sage. Incidentally, both the restaurant and the enoteca work without a break during the day. The shop under the name Simoni has been operating since 1960 and also specializes in typical products of the region – from fresh pasta to mortadella with all the stops. Now there are three Simoni signs in the city: the two shops were recently joined by the Laboratorio Simoni snack bar, an incredibly popular place for an aperitif or dinner with tables that are brought right into the thick of the market district. Try the Emilian porchetta, baked pork roll, and tigelle, fluffy flatbreads that are baked in special molds with different patterns.
