1 C. White Vinegar
1 C. Water
1 tsp. Sugar
1 1/2 tsp. Salt
1/2 tsp. each of whatever spices you want: peppercorns, mustard seeds, dill, garlic cloves, allspice, etc. The sky's the limit.
Boil water, vinegar, salt and sugar just until salt and sugar are dissolved.
Pour liquid over carrots and spices. Lid and let totally cool to room temp. Keep in refrigerator indefinitely as long as carrots are completely submerged in brine.
