Quick Pink Pickled Onions - easy meal prep recipe

•⁠ ⁠1 red onion, thinly sliced
•⁠ ⁠1 tbsp capers
•⁠ ⁠1 tsp mustard seeds
•⁠ ⁠1 tsp salt
•⁠ ⁠1 tsp sugar
•⁠ ⁠100ml apple cider vinegar (or white wine/rice vinegar)
•⁠ ⁠100ml water

Pop everything in a jar, give it a shake, and leave it to do its thing for at least 30 mins (longer = better). Keeps in the fridge for up to 2 weeks. You can add chilli if you want a kick, or keep it simple, up to you!
