500g durum wheat semolina flour, 380g water, 1 tsp dry yeast, 1 tsp sugar, 10g salt, 20g olive oil ????
Mix semolina, sugar, and yeast. Add most of the water, then salt, the rest of the water, and finally the oil. No overmixing—this dough just wants to chill ????
After 10 min, fold and roll over itself a few times until smooth. Cover and rest in the fridge for 24h.
Split in two, let rest 30 min to 2h. Roll out one half on a floured surface, place in pan (30x20cm), add your favorite fillings ????????????, cover with the other half, drizzle oil, and dimple the top ????
Bake in a static oven at max heat: bottom rack first, then move to the middle — 18–20 min total.
