Berries are at their best at the moment, so make the most of the season with this simple but stunning summery tart.
With golden crisp pastry, zesty whipped crème fraîche and glossy berries - this one’s perfect for warm days, picnics or last-minute desserts.

Save this one for next time you need an easy but impressive summer pud x

Ingredients
For the tart
* 150g strawberries
* 150g raspberries
* 150g blackberries
* 1 roll plant-based puff pastry
* 400g plant-based crème fraîche
* 4 tbsp strawberry, raspberry or apricot jam
* 1 lime
For the glaze and garnish
* 2–3 tbsp strawberry, raspberry or apricot jam
* Small handful mint leaves

Before you start
Preheat oven to 200ºC fan | Line a baking tray | Small sharp knife | Pastry brush

Method
1️⃣ Prep the pastryUnroll the puff pastry onto a lined baking tray. Using a small sharp knife, score a border around the edge, about 2cm in from all sides – don’t cut all the way through.Use a fork to prick all over the middle of the pastry (inside the border), again being careful not to pierce all the way through.

2️⃣ Bake the baseBrush the entire surface of the pastry with plant-based milk and bake in the oven for 20–25 minutes, until golden brown, puffed and crisp.

3️⃣ Prep the fruitWhile the pastry bakes, hull and halve the strawberries. Leave the raspberries and blackberries whole unless very large.

4️⃣ Assemble the tartOnce the pastry is baked, press down the puffed centre gently with the back of a spoon, keeping the border intact.Spoon in the crème fraîche and spread evenly to the edges of the border.Dollop the jam on top and swirl gently to combine.Zest the lime directly over the filling.Top with all the berries, arranging however you like.

5️⃣ Make the glazeAdd 2–3 tbsp of jam to a small bowl with 2 tsp water. Microwave for 10 seconds, then stir to loosen.Brush the glaze gently over the fruit using a pastry brush for a glossy finish.

6️⃣ Garnish & serveFinish with torn mint leaves scattered over the top.Serve straight away or chill until needed. Perfect on its own or with an extra spoon of crème fraîche.
