This recipe mimics the taste and feel of Coca-Cola quite closely — especially if you’re focusing on that nostalgic, spicy-citrusy flavor — but there are some key differences due to the lack of artificial ingredients and additives.

Ingredients (for 1 to 1½ cups of syrup):

???? For Caramel Base:
1 cup sugar
2 tbsp water (for initial caramel)

???? After Caramelization:
1½ cups water
2 tbsp jaggery (for depth & molasses note)

???? Spices & Peels:
1 small cinnamon stick
3–4 whole cloves
½ tsp dry ginger powder (or 1 slice fresh ginger)
½ tsp coriander seeds
Peel of ½ orange (washed well, organic if possible)
Peel of ½ lemon
A pinch of black salt (kala namak)

???? Finishing Ingredients:
Juice of ½ orange
Juice of ½ lemon
½ tsp vanilla essence or extract

Method:
1. In a heavy-bottomed pan, add sugar and 2 tbsp water. Heat on medium until it melts and turns a deep amber (caramel stage). Don’t stir — just swirl the pan gently.
2. Once caramelized, carefully pour in 1½ cups water. It will splatter a bit — stir until the hardened caramel dissolves completely.
3. Add jaggery, cinnamon stick, cloves, coriander seeds, ginger, orange and lemon peels, and black salt. Simmer on low for 10–12 minutes until thick and aromatic.
4. Add orange juice, lemon juice, and vanilla essence. Simmer for another 3–4 minutes.
5. Strain through a fine sieve. Let it cool completely.
6. Store in a clean glass bottle in the fridge for up to 2 weeks.

???? To Serve (per glass):
2–3 tbsp cola syrup
Lots of ice
Chilled plain soda (top up)
Optional: Mint leaf or citrus wedge for garnish

Tips for a Closer Cola Flavor:
Add 1 drop of nutmeg or neroli essential oil (if safe & food grade)
You can steep a tiny piece of dried lavender or orange flower in the syrup (original Coca-Cola had floral citrus notes)
